Carribbean in Kentucky?

Who knew you could get Carribbean food in Kentucky! ?! Cocos Lokos in Louisville rocks!

Best mojito I ever had! Also DH loved the Pollo Guisado and the croquettes we shared pictured above were so good with a spicy sofrito and cream sauce on the side. I had the coconut shrimp pasta with some tostones (mashed fried plantains), very good. DH's entre came with rice, beans, and some maduros (slices of plantain marinated in citrus juices then fried).

It was a really unexpected and tasty dinner...in Kentucky!

Discount Grocery Stores

Here's a list of discount grocery stores in Missouri, listed by city. If you're looking to save money on groceries with only slight defects in packaging then one of these might be the place to go.

There used to be what we called the "dented can" store on Hwy 100 between Gray Summit and Manchester but I don't think that place is still in business. You may want to call ahead to be sure that these places are still open.

I'm thinking of possibly hitting the one in Rolla with my Mom sometime just to see what they have and stock up on some canned items. Also with all of our trips to Columbia, I'm wondering if there are any on the way to or from there.

So my talented DH took this photo of Killian's Irish Red Beer in our kitchen (turned temporary photo studio). We'd finished dinner of italian chicken tenders with pea pods and grape tomatoes, Kashi fiesta 7 grain mixed with corn, beans, and peppers, and croissant rolls. Something I just whipped up from what I had on hand. Tip: Italian dressing can season just about ANYTHING. I use it on chicken, potatoes, veggies, pasta, rice...

Anyhow, DH decided to "have" a Killian's beer and offered me one which I gladly took him up on. No wonder I finished mine first, his was busy at the photo shoot! I do have to say, this photo does make it look pretty!

"AIN'T NO THING LIKE A CHICKEN WING"

On a weird note, I have been craving meat. So far this week I made a beef roast, Italian breaded chicken breast, BBQ chicken wings, and used ground turkey in my pasta sauce. Not sure the significance of this craving. Normally, I'm on the meat-light diet preferring tuna, egg whites, legumes, nut butters and the occasional steak to fill in the protein requirement. While I was off my medication I craved carbs....bread, pizza, potatoes, crackers, oatmeal, no grains were safe but as soon as I was back on my medication for a few days the meat obsession kicked in. I even told DH that at one point I could actually smell a pot roast dinner just by thinking about it. Right now if I think about BBQ wings I can almost taste them. The brain is a scary thing and can't be trusted!

I did make some fabu wings in the crock pot. I bought a package of wings, chucked them in the crock with a small bottle of sweet & tangy BBQ sauce (KC Masterpiece) and some water. Put it on high for 4 hours, drained the wings (the sauce was really thin), poured some more BBQ sauce on them and stuck them in the fridge. The next night I just microwaved them and swirled them around in the BBQ sauce and OH MY GOSH! They were fall off the bone deliciously good. DH and I had them with a side of asian veggies (that's how we roll). There "AIN'T NO THING LIKE A CHICKEN WING"

Dinner at Mom's

Saturday night we headed to Mom's for a pork chop dinner! Normally, I wouldn't blog about it, but I thought, well why not?

We have no photographic evidence, so here's an image I found online.





Although truthfully, we had baked potato, green beans, and a recreation of a salad from Dewey's pizza (spring mix, feta cheese, grapes, and walnuts with a Raspberry Vinagrette, thank you). All yummy and wonderfully prepared by Mom (except for the salad). Add a glass of Merlot and voila, dinner is served. Thanks Mom!

Los Cabos and Planning the Weekend


Tonight we met up with another set of friends. I haven't worked up a "blog pseudonym" for them yet. They may have to make some suggestions.

Anyhoo, we enjoyed another dinner with them, this time at Los Cabos. We caught up on the last two weeks and chatted about: Movies, Music, Vegas, "How to give flowers and mean it" ahem, and also this:


Also, I can not believe that I have found someone who has seen more John Cusack movies than I! I am truly ashamed to call myself a fan. I may have to reevaluate my level of comittment to the cause, truly.

On the plus side, I found people who A) Have heard of the movie "Better Off Dead" and 2) Will admit they like it!






Anyhow, another pleasant ending to a rather hectic week!

As far as planning the weekend. MrLacubrious has that all TCO. We're driving to Galesburg, IL. to catch a Javi show. It's a 4+ hour drive, so we're staying over. My dear, sweet, bro has agreed to dog sit, yet again. I don't know what I would do without him! The dogs are big fans too. I think they like the shake up of the caretakers every once in a while.

New T-Day Dessert - Libby's Pumpkin Roll

So I tried a new dessert this year.Oh, but by no means did I NOT make my usual Cheesecake Supreme. They would have chased me outta town with pitchforks!

Anyhow, it's just the recipe inside the label of the Libby's canned pumpkin. It was super yummy! I kept a little wedge back at home so L-Too and I could have a couple of slices the next day.

My "roll" turned out a little more oval shaped, but it was still beautiful. I can't wait to try it again.
